2010 in review

Thought this would be fun to post.  It’s the last look at 2010 and now let’s get on with 2011

Hold That Thought

Not Far, Just On Break

I’m not far away.  I’m just in need of a break. 

Work is very busy and I’m trying to get things wrapped up before I go on vacation.  I have not forgotten about everyone and I hope you understand.

I have a bunch of great recipes for the holidays and I hope you will take a look through some of them.

Blog Update

As I move through some changes in my life I will not be posting each and every day.  I will post fairly regularly so there will always be something new.  I just won’t be doing this every single day.

There is also a chance that I may give this blog to another person.  This may or may not happen.  If it does, this person will continue on in the same spirit that this blog was created.

For now, I am here and will continue to add, what I consider to be, good recipes for you to enjoy.

No Go Chocolate Cake

BLECH, I tried to modify the Vegan Chocolate Cake recipe and it was not a good thing. In my head, I thought it would work.

 

Oh well, so far the only thing that can find it’s way to this blog is the Fried Tofu. It is delicious but I have to figure out how to share my Vegan recipes to those of you who are very carb conscious. Give me some time and I’ll get something together. I won’t post just anything. I have to believe the recipe to be good, or see good reviews.

Hang in there and I’ll get the hang of this.

If you have any ideas, recipes or tips please let me know. I would love to hear from you.

Future Plans

In my previous post I mentioned a change in the direction of this blog.  Well, here it is.

I will no longer be posting recipes that include meat and/or animal products.  I have not eaten meat in awhile and to continue posting recipes that contain these items goes against my heart.

I used to be a Vegan, many years ago.  I’ve found my way back and it does my heart and soul good.

Do high protein, low carb recipes work in helping control diabetes?  Basically, yes.  It’s individual and each of us must find what works for us.  It’s up to us to find the right balance for optimum health.

I will keep all the recipes I have posted right here.  I will not remove them.  But, going forward the posts will not be daily and will be Vegan based and relatively low carb.

Since the switch, I have experienced lower fasting blood sugars and very slowly a better overall healthy feeling.  It’s slow but I have stopped taking various prescriptions since changing my way of eating.  For me it’s a healthy way and besides, my heart knows it’s the right thing to do.

Do I think everyone should be a Vegan?  I think it’s a personal choice. 

So, I hope you continue to visit and discover some new recipes that you just might find delicious.  If you’re not that brave, you will always find a good recipe that is tried and true.  There will be something for everyone to enjoy.

I think I have rambled enough.  Now I am working on a chocolate cake recipe that will work for low carbers and be Vegan safe.  Here’s a picture of the cake that I’m going to work on.  I just need to make sure Splenda works like sugar when baked.  Other than that, just swap out for Carbalose flour and you should be good to go.  Stay tuned. . .

With An Attitude Of Gratitude

It has been way too long since I’ve said Thank You!

I get so wrapped up in work and other projects I forget to stop and say thank you to each and every one of you that have been kind enough to donate to The Taming Of The Diabeastie.

Believe me this means so much to me.  All the pennies I can gather are making it possible for me to begin creating something very special for the diabetic chef or chef wannabe!  I have faith in my project but faith can’t buy supplies.

A simple thank you doesn’t seem to effectively express the gratitude I feel for you and your kind gesture.  But, that’s all the words I have.

Thank You from the bottom of my heart.
