Spicy Pork Loin

Spicy Pork Loin

INGREDIENTS:

1 (4 lb) boneless center cut pork loin roast
1 tablespoon minced garlic
2 teaspoons paprika
1 1/2 teaspoons salt
1 1/2 teaspoons fresh ground pepper
1 teaspoon oregano
3/4 teaspoon ground red pepper

DIRECTIONS:

   1. In small bowl combine seasonings. Rub over pork. Cover with plastic wrap and refrigerate overnight.

   2. Preheat oven to 425 degrees. Unwrap pork; place on rack in a roasting pan and place in oven; immediately reduce oven to 325 degrees.

   3. Roast 2 hours and 15 minutes or until meat thermometer reaches 155 to 160 degrees. Let stand 10 minutes (can be held at room temperature 1 hour).
