Turkey Rollups

Turkey Rollups


6 tablespoon Sharp cheddar cheese shredded
1 tablespoon Green onion thinly sliced
2 teaspoon Dijon mustard
1 tub Cream cheese
6 each Flour tortillas **
12 slices Cooked deli turkey breast
12 large Fresh spinach leaves or 1 unpeeled cucumber, sliced


Combine first 4 ingredients in a bowl; stir well.
Spread 3 tablespoons cheese mixture over each tortilla.
Top each with 2 slices turkey, 2 spinach leaves, and 4 cucumber slices; roll up.

NOTE: ** I have good luck with the low carb tortillas at La Tortilla Factory. They are very tasty and don’t impact my blood sugar too badly. I just checked the site and I see that they have gluten-free tortillas. So, there’s even more options!!!! It’s all good.
