Chicken Mozzarella

Chicken Mozzarella

A friend sent this to me and it sounds really, really good. I think my substitution will work out just fine!


4 boneless chicken breasts
2 eggs
1 cup breadcrumbs (this is estimated) NOTE: I am sure we can substitute with crushed pork rinds
1/2 cup chicken broth or instant Oxo, diluted
6 mushrooms, sliced
4 slices of sliced mozzarella cheese (again estimated.you can use more)


1. Cut chicken into bite sized pieces and soak in egg 5 hours or overnight.

2. Dip chicken pieces into bread crumbs and fry in butter and/or oil until lightly browned.

3. Place in casserole dish.

4. Cover with sliced mushrooms, then sliced cheese.

5. Pour chicken broth over all.

6. Bake at 350 degrees for 30 minutes covered, then another 30 minutes uncovered.
