Indian Spice Chicken

Indian Spice Chicken

A co-worker sent this to me and I’ve been meaning to post it for everyone. It sounds really interesting and tasty.

INGREDIENTS:

5 chicken breasts *
1 cup non-fat vanilla yogurt ** Watch out for the carbs.  Read the labels carefully.
1 tablespoon minced jalapeno peppers
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
2 dashes nutmeg
1 dash garlic powder

DIRECTIONS

1. Mix together yogurt, jalapeno, cumin, pepper, nutmeg, and garlic powder in a small bowl.

2. Rub mixture over chicken; cover and chill overnight (or at least 2 hours).

3. Broil meat 4 inches from heat source until cooked through, about 4-6 minutes per side.

4. Let stand 5 minutes before serving.

* NOTE: I don’t know if the chicken breasts are bone-in or boneless.  But, I would use the bone-in
