Baked Chicken Breast

Posted by Solitary Dancer on May 14, 2007

A friend sent this to me via email.  I think this sounds great and, as always, I love easy and this one fits the bill.

Baked Chicken Breast

4 boneless skinless chicken breasts
4 teaspoons fresh tarragon
1 cup button mushrooms, sliced thin
2 garlic cloves
1/2 cup white wine
2 cups fat-free chicken broth
2 tablespoons olive oil
1 cup parmesan cheese, freshly grated

1. Preheat oven to 400 degrees F.

2. Chop Tarragon and Garlic together with olive oil to make a paste.

3. Massage garlic mixture all over breasts.

4. Place chicken in glass baking dish and add mushrooms, stock, and white wine. Cover with foil.

5. Bake for 25 minutes.

6. Remove foil, baste breasts, and sprinkle cheese on top of each.

7. Bake for an additional 5 – 10 minutes or until browned and cheese has melted.
