Ham and Egg Salad

Ham and Egg Salad

INGREDIENTS:

3 eggs, hard boiled, peeled and chopped
4 slices deli ham, chopped **
1/2 cup cheddar cheese, shredded
1/4 cup mayonnaise
1 teaspoon mustard
1 teaspoon vinegar
1/2 teaspoon salt

DIRECTIONS:

1. In a medium bowl, mix together all but the bread; blend well.
2. Cover and chill 30 minutes.

NOTE: I used left over ham chunks but I’ve seen in the store where you can buy boiled ham chunks.  I only say this because I thought the chunks gave the salad a better texture than the chopped slice pieces. One more thing, I threw in some sliced black olives and it wasn’t that bad. 🙂
