Scotch Eggs

Scotch Eggs

Approx. 2 lbs bulk pork sausage
Hard boiled eggs (approx. 8-10, depending on how thick you wrap the sausage)
1 beaten egg
Cornflake crumbs

Make a patty with the sausage and wrap it around the egg, sealing the egg in totally.
Roll in beaten egg, then cornflake crumbs.
Bake at 350 degrees until sausage is done, about 20-30 minutes.

The person that gave me this recipe says the little bit of cornflake crumbs don’t upset her bloodsugars.  But remember to test as YMMV (Your Mileage May Vary!)
