Adam’s Crock Pot Chicken

Adam’s Crock Pot Chicken

Serves 3. ( I would think you could double this with no problem)


* 1 pound chicken breasts or thighs
* 1 head cauliflower, grated
* 1 T olive oil or bacon drippings
* 1.5 t dried herbs — basil, thyme
* 1.5 t dried parsley
* onion powder
* 3 T heavy cream
* 1 C shredded cheddar cheese
* salt & pepper to taste


Grate cauliflower.

Brown chicken breasts in olive oil in cast iron skillet, medium high heat.

 Add cream. Stir to scrape up any browned bits. Add grated cauliflower to crockpot.

Sprinkle cauliflower with seasonings & parsley. Put chicken atop cauliflower. Cook on High 4-5 hours (or Low 6-8 hours).. Fifteen minutes before serving, sprinkle cheese over all.
