Lynne’s Griddle Brownie

When you crave chocolate and want to control the ingredients, this might get you through a tough time.

1/4 cup flax meal (flax seed ground in a coffee grinder)
1/4 cup ground walnuts (keep them rather coarse)
1 Tbsp granulated Splenda, or equivalent amount of any sweetener
1 Tbsp cocoa
2 tsp ground cinnamon (optional)
1/2 tsp baking powder
1 egg, beaten with a fork
2Tbsp oil (I use olive oil or hemp oil)
2 Tbsp da Vinci Syrup (I use gingerbread)
2 tsp water
1 tsp vanilla extract

Mix the dry ingredients then add the wet ingredients to them and stir. Pour into a hot griddle, oiled with butter if you like and cook like a pancake over high heat.

Eat fresh with whipped cream or a dollop of cream cheese.
If you quadruple the batch you can chill or freeze the ‘brownies’.
