I’ve used this recipe for the past 5 yrs, can’t remember author who adapted recipe.of her mother for low-carb. They are great and both low carbers and non-low carbers love them! I’ve brought them to pot luck functions everyone raves about them as a dessert, I eat them as a breakfast, snack or dessert depending on my mood. Experiment to get sugar substitute right for your taste.


makes not quite 2 dozen

3- 8oz. cream cheese
favorite heat stable sweetener (equivalent to 1/2 cup sugar in muffin mix-I used less granular Splenda-count carbs)
1.5 tsp vanilla
5 eggs

Bring cream cheese to room temperature, cream together cream cheese and sugar substitute of your choice, add vanilla extact. Add eggs, beating in one at a time (don’t take a short-cut on this!).

Use cupcake papers to line muffin pan. Bake in 300F oven for 40 minutes. Cool for 5 minutes, a depression will occur on top of muffin-then top with:


1 cup sour cream
favorite heat stable sugar substitute equal to 1/2 cup sugar-I used less granular Splenda-count carbs
1/2 tsp vanilla

Beat all ingredients together. Spoon a little of this onto each cupcake where ther should be a depresion formed, Put back into the 300F oven for 5 minutes, then remove and cool.
