Lynne’s Cinnamon Shortcake Base or Griddle Cake

Lynne always comes up with the greatest recipe ideas.  Thanks Lynne!

Lynne’s Cinnamon shortcake base (or griddle cake)

Dry ingredients:

1 C flax seed, freshly ground in coffee grinder
1C almonds, ground
3 heaping tablespoons cinnamon
1/2 cup granulated splenda
2 tsp baking powder

To this add:

1/4 cup oil (I used hemp oil but olive oil or other plant oil would work)
1/4 cup daVinci gingerbread syrup
1/2 cup water
4 beaten eggs

Mix well and let stand while you heat the griddle to high heat. Cook one griddle cake at a time, allowing for 4 huge cakes. I like mine crispy brown, stay with them, they burn easily. Use as a base for shortcake or eat with daVinci syrup as a topping.
