Lynne’s Chicken Fritter

Lynne’s Chicken Fritter

1/4 c ground flax seed
1/4 cup ground hulled sunflower seeds
1 egg, beaten
1 tsp summer savoury or poultry seasoning
salt and pepper to taste
approx. 3 oz. cooked, diced chicken, about the amount which is the size of a pack of cards
2 Tbsp water
grated cheese (optional)

Mix the ground flax and sunflower then add the other dry ingredients.

Stir in the egg and water until you have a goopy mixture that will hold the chicken.

Stir in the meat as you heat a tiny frypan to med-high using a small amount of oil.

Turn your batter into the pan and cook on one side the way you would a pancake.

Carefully flip until the other side is golden brown. This is a full meal!

You can add a little grated cheese if you wish, I use Tex-Mex.
