Charlie’s Green Chili Casserole

Charlies’ Green Chili Casserole

Well, here goes what I can remember.

4 Cans Green Chilies (whole ones)
8oz. Grated Cheddar
8oz. Grated Monteray Jack
1 can Evaporated Milk
2 Tbsp. Flour (I eliminated it and it didn’t seem to make a difference)
1 Can Tomato Sauce
4 Eggs

Wash the chilies and pat dry.
Layer them in a glass pyrex cassarole dish, chilies, cheeses, chilies, cheeses.
Separate the eggs.
In the bowl with the yolks, mix the milk, salt, pepper and flour (if you want)
Put this bowl aside for a minute.
In the other bowl with the four egg whites, beat them until stiff.
Fold the beaten egg whites into the egg yolk mixture and pour it over the chilies and cheeses.
Bake at 325 for one hour.
At that hour mark, pour the tomato sauce over it and back for 20-30 min. more.
I served it with a salad. YUMMMY!
