Jim’s Zucchini Casserole

Here’s one for those of us with friends who got a little carried away with the zucchini planting…Jim

ZUCCHINI CASSEROLE

1 pound ground beef
1/2 small onion, chopped.
3 small zucchini, sliced in half moons
1/4 pound fresh mushrooms, sliced
1/2 can Cream of Mushroom Soup
4 ounces cheddar cheese, shredded

Brown ground beef with onion and a little salt and pepper; drain fat. Put in a large, greased casserole pan. Sauté the zucchini and mushrooms until almost tender; season lightly and add to ground beef. Stir mushroom soup into meat and vegetable mixture along with cheese; adjust seasoning if necessary. Bake at 350º for 30 minutes or until hot and bubbly.

Makes about 4 servings

Per Serving: 436 Calories; 34g Fat; 28g Protein; 6g Carbohydrate; 2g Dietary Fiber; 4g Net Carbs
