Mandy’s Chicken To Die For

(strange title but once you taste this recipe you will understand )

Chicken breasts sliced lengthways to form a pocket
Insert a slice of cheddar cheese
Sprinkle some chives over the cheese (or whatever your favourite herb may be)
Close up the chicken
Wrap around with streaky bacon (or other bacon) to form a package
Heat some butter or oil in frying pan
Fry the chicken parcels to brown the outside then reduce heat, cover pan and cook slowly until thoroughly cooked inside.
Don’t worry about the cheese melting out – that is supposed to happen.
You can also slice some mushrooms and fry around the chicken at the same time if you wish.
Add a splash of double cream to the juices in the pan to make a nice thick sauce
If you are feeling festive you can also add a splash of wine

Serve with the sauce on top with vegetables of your choice

You will NOT be sorry you cooked this particular recipe!
