Ginny L’s Hamburger and ‘Rice’ Casserole

Hamburger and “Rice” Casserole

1 1/2 lb lean ground beef
1 head cauliflower, shredded in food processor
15 oz canned sugar-free tomatoes
1 green pepper, chopped
1 medium onion, chopped
1 t minced garlic
1 t cajun seasoning
2 c shredded American or cheddar cheese
salt and pepper — to taste

Brown and drain the hamburger along with the onion and green pepper. Shred the cauliflower in a food processor using the shredding blade. In a large casserole dish, mix all ingredients together, and 1 cup of the shredded cheese. Sprinkle 1 cup cheese on top.

Bake at 375 degrees for 30 minutes.

NOTES : A very hearty casserole. Good comfort food on a cold winter day.
