Crockpot Turkey and Mushrooms

Crockpot Turkey and Mushrooms

1 boneless turkey breast [3 lbs] halved
2 tablespoons butter
2 tablespoons dried parsley
1/2 teaspoon dried tarragon
pinch of salt
fresh ground pepper to taste
1 cup sliced fresh mushrooms
1/2 cup white wine
1/2 cup chicken broth

Position the turkey skin side up, in the crock pot. Brush with butter. Sprinkle with parsley, tarragon, salt and pepper. Top with mushrooms and pour the broth and wine over it all. Cover and cook on low heat for 7-8 hours

Remove turkey and keep warm. Skim the fat from the juices and then reduce by half. Serve with the turkey.

Makes 12 servings with approximately 2 grams carb per serving
