Jeremy’s Awesome Low Carb Stew

Posted by Solitary Dancer on May 12, 2006

Jeremy’s Awesome Low Carb Stew

2 cans beef broth
1 lb. ground beef
1 lb. mild ground pork sausage
12 to 16 oz. shredded cheddar cheese
1/2 t. ground black pepper
1 cup finely chopped onions
1 can Rotel diced tomatoes with peppers (I use the Rotel diced tomatoes with green chilis)
1 T. minced garlic

How To Prepare:

Brown meat until done; drain. Combine in large pot all ingredients except the cheese and simmer for about 15 minutes. Add cheese and simmer on low until it’s melted. For a thinner soup, add more broth; for thicker a thicker stew, add more cheese. Enjoy!

I think this would do well cooked on low in a slow cooker. I haven’t tried it that way but I think it would work.
