Ewertro’s “Potato” Salad

Ewertro’s “Potato” Salad

Here is my mother in laws favorite “potato” salad.

1 pound of bacon
1 doz. eggs
1 bunch of green onions (chopped)
1/2 of a large jar of Mayo
1 1/2 large heads of cauliflower , chopped to 1/4 inch bits

boil up the eggs, fry the bacon until crisp then break into small pieces, boil the califlower, then when tender, break the califlower up into smaller pieces and throw into a large bowl. Toss in the rest of the ingedients and mix well, adding or subtracting the mayo until you get the consistency that you like. Dust the top with a little Paprika, and enjoy. We used to eat this all the time with real potatoes, but we recently tried it with califlower, and it is still great.
