Smothered Chicken II

Smothered Chicken II

4 chicken breast halves (boned)
olive oil
2 tablespoons butter
2 cups button mushrooms sliced
1 clove garlic minced
1/4 cup dry white wine
salt and pepper to taste
8 slices bacon
8 ounces grated cheese

Coat chicken breasts in olive oil and grill under a medium grill for about 12 to 15 minutes until cooked. Be careful not to overcook or they will become too dry.

In a saucepan melt butter and saute sliced mushrooms and garlic until tender. Add wine and saute for another 5 minutes. Season to taste.

In a frying pan, fry bacon until long and crispy. Remove and drain on paper towels.

Place each chicken breast on a baking pan and place 1/4 of the mushroom mixture on each breast. Place two bacon slices over the mushrooms and cover with the cheese.

Bake for 5 – 10 minutes until cheese has melted and started to brown.

Serve hot.

4 servings.

2g carbohydrate, 393 calories, 25g fat, 35g protein.
