Alice Springs Chicken

Alice Springs Chicken.

I used to order this at Outback! It’s yummy.


4 boneless chicken breasts
8 pieces of bacon, coarsely chopped
8 ounces of fresh mushrooms, sliced
1 teaspoon butter
1 clove garlic, minced
4 ounces cheddar cheese, shredded


Season the chicken with seasonings of your choice. Grill until just done.

Keep chicken warm. Meanwhile, fry the bacon in a skillet until crisp and drain on paper towels.

In another skillet, saute the mushrooms and garlic in butter, seasoning with salt to taste. Cook until juices have evaporated.

Place chicken on a foil-lined baking sheet.

Top each piece of chicken with mushrooms, then bacon and then cheese.
Broil until cheese is melted and bubbly.

TIP: I found it a bit too tricky to get all the ingredients prepared and assembled while still hot. Instead of trying to keep everything warm, I just assembled and baked them at 350 F for 10 minutes or so, until hot and the cheese had melted.
