Miriam’s Spanish Rice

Posted by Solitary Dancer on January 12, 2006

3 slices Bacon
½ cup chopped onion
½ cup chopped green pepper
½ cup red pepper
2 cloves of garlic
3 cups raw cauliflower rice (just shred raw cauliflower in food proc)
1 pint stewed tomatoes OR 2 cups canned tomatoes (I would try only 1 cup canned tomatoes)
1 Tsp paprika
Salt and pepper to taste (1/2 Tsp salt – ¼ Tsp Pepper)

1 Brown bacon till crisp and leave in pan.
2 Add onions, pepper and garlic and cook till translucent.
3 Add cauliflower rice and cook 2 min.
4 Add stewed tomatoes and spices.
5 Put in 350 deg oven, covered with foil for 2 hrs.

You really cannot tell the difference between this and real rice…don’t drain off anymore bacon fat then you have to as this gives it the flavor…yes you have to cook it 2 hrs..I tried pre-cooking it but the texture isn’t the same- this is very “ricey”….a winner!!!

Don’t put a lot of liquid. Cauliflower is not like rice and it will not absorb the liquid.
