LC Monte Cristo

I was craving a Monte Cristo sandwich the other day, so my daughter and I did some experimenting; now this is one of our favorite things to eat….

2 oz cream cheese
2 tsp. sf/lc raspberry jelly
1 oz ham
2 eggs
1 Tbs. heavy cream

Melt 1 oz cream cheese; beat into the eggs along with heavy cream. Poor into fry pan (you are making an omelet) let cook till egg is just about done. Put ham on 1/2 of the egg let finish cooking. While that is finishing, melt the last 1 oz cream cheese and 2 tsp. jelly together in micro, mix and spread over the ham. Fold the egg over, and enjoy!!
