Chocolate Chip Mint Popsicles

AuntieJoyce at Dr. B’s forum came up with this wonderful idea. Actually she calls it a mistake. What a lovely mistake!!!!!! Here’s what she did, in her own words.

I often use coconut milk as a substitute for cream. It freezes very hard. So rather than use the ice cream maker, I just tried pouring it in popsicle forms with the plastic sticks and it worked great. Run hot water on the bottoms to extricate them.

 

 

First, melt the butter then mix in the cocoa.
1T butter, melted
1T cocoa powder
Then whisk in these:
1 can coconut milk
2 capfuls peppermint extract
2TBS Splenda
1 tsp stevia

 

When you add the chocolate to the coconut milk, it seizes up into little bits. I found this out by accident when I was trying to make chocolate ice cream. It was a happy accident.

 

8 servings. Approximately 4g carbs, 120 calories

 

NOTE: some folks have made this recipe and used ice cube trays if popsicle forms were not available. The outcome was just fine.
