Cranberry Cake

My buddy Al, over at Dr. B’s Forum, posted this yummy recipe. I think it sounds delicious! I know I can’t get coconut flour locally but I can order it from Netrition. This sounds like it will be a keeper!
CRANBERRY CAKE
INGREDIENTS:
1/2 cup butter, melted
1/2 cup coconut milk
9 eggs
3/4 cup granulated Splenda or substitute sweetener of choice
3/4 teaspoon salt
1 teaspoon vanilla
3/4 cup coconut flour, sifted (important to sift all coconut flour before using)
3/4 teaspoon baking powder
1/2 cup cranberries, chopped
DIRECTIONS:
Mix butter, coconut, milk, eggs, sugar, salt and vanilla.
Combine coconut flour with baking powder and whisk into batter until there are no lumps.
Stir in chopped cranberries and pour batter into a 8″X8″X2″ pan. Bake at 350 Deg F or 175 C for 35 minutes or until knife inserted center comes out clean.
Cool and frost with cream cheese frosting. I think this recipe for frosting would work well. Minus the St. Paddy’s Day food coloring. ![]()
This batter also makes very good muffins
