Weaselle’s Just Like Stuffed Baked Potatoes
INGREDIENTS:
2 1/2 c. cauliflower
1 c. sour cream
3/4 c. grated cheddar
3 finely chopped green onions (separate the whites from the greens)
3 slices cooked, crumbled bacon (I use 6 slices)
Salt/pepper to taste
DIRECTIONS
Cook cauliflower until tender but firm.
Chop into pieces about the size of hash browns.
Mix sour cream, 1/2 the grated cheddar, 1/2 of the bacon, and the onion whites, salt & pepper.
Stir into cooked cauliflower.
Place in greased baking dish and sprinkle rest of cheese and bacon on top.
Bake @350 for 20 minutes or until heated through.
Sprinkle green onions on top.
