Marion’s Sausage and Egg Muffins

Sausage and Egg Muffin

(keeps for days in the fridge, great for breakfast on the run)

INGREDIENTS:

1 lb. breakfast country sausage (such as Jimmy Dean)
4 eggs
1 cup carb countdown milk (or cream or cream/water)
1 1/2 cup (6 oz) grated cheddar
Salt and Pepper
Optional - mushrooms, onion or onion powder, bell pepper, small amount of chopped sun dried tomatoes)

DIRECTIONS:

Cook sausage till done and crumbled.
Set aside to cool slightly.
Mix eggs, milk, salt, pepper, cheddar, other ingredients as you like.
Mix in sausage.
Divided into 12  greased muffin cups.
Bake at 350 degrees about  20 minutes.
Let cool and keep in fridge.
Good cold or warmed in microwave.

Makes 12 muffins - each  with 207 calories, 16.6 gms fat, 1.67 gms carb, and 12 gms protein - optional ingredeints will change values

Carb Countdown milk has, per 1 cup, 90 calories, 5 gms fat, 3 gms carb, and 8 gms  protein - using cream will change nutritional value
