This is an “Adult” version of the Gelatin Blocks you make for the kids. This version is Margarita flavored but you can use your imagination and creativity to do other flavors.
Ingredients
1 packages Lemon Gelatin – I used sugar-free
3/4 ounce Unflavored gelatin – three envelopes
2 cups Water – divided
1 cup Tequila – don’t waste the good stuff on this
1/4 teaspoon Lemon Extract
1/4 teaspoon Orange Extract
1 medium lime
Directions
Place one cup of cold water in a medium size mixing bowl. Sprinkle the flavored and unflavored gelatin over the cold water and stir briefly. Allow this to set for at least five minutes while the gelatin “blooms”.
Heat the second cup of water to boiling and stir it into the dissolved gelatin. Mix until it’s completely dissolved and looks fairly clear. If you want to add a small drop of green food coloring at this point you’ll get a more “Lemon-Limey” color. Allow this to cool for a few minutes then add tequila and the two extracts. Stir briefly and move the bowl to the refrigerator to partially set.
In the meantime wash the lime and cut thin slices. Remove any seeds. You can cut each slice in half if desired.
When the gelatin is partly set and starting to thicken pour some into each well of an ice cube tray or 2 ounce souffle cup. Place a small slice of lime in each one. Return to the refrigerator until they are completely set.
