South of the Border Stuffed Mushrooms
INGREDIENTS:
1/3 lb ground beef
1/2 teaspoon garlic, minced
2 tablespoons onions, minced
1 teaspoon cumin
1 teaspoon chili powder
1 tablespoon mild green chilies, chopped (canned)
1/2 cup Monterey jack cheese, grated
1/2 cup breadcrumbs (Watch out for the carbs. You might be able to substitute with crushed pork rinds)
12 large mushrooms
DIRECTIONS:
1. Brown the beef in a skillet. Add the onion and garlic.
2. Cook until just soft. Remove from the heat.
3. Add the cumin, chili powder, chiles, cheese and breadcrumbs.
4. Remove the stems from the mushrooms.
5. Fill the caps with the mixture. Place on a lightly oiled cookie sheet and bake at 375 degrees F. until lightly browned (about 30 minutes). Serve warm.
