Feta and Bacon Stuffed Chicken Breasts

INGREDIENTS

8 tablespoons olive oil
2 teaspoons lemon juice
4 cloves crushed garlic
1 tablespoon dried oregano
salt and pepper to taste
4 skinless, boneless chicken breasts
4 slices feta cheese
4 slices bacon, fried and drained

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C).

2. In a small bowl combine the oil, lemon juice, garlic, oregano, salt and pepper. Mix together.

3. Place chicken in a 9×13 inch baking dish and pour oil mixture over chicken.

4. Stuff each chicken breast with 1 slice feta cheese and 1 slice bacon. Secure open sides with toothpicks.

5. Bake uncovered at 350 degrees F (175 degrees C) for 30 to 35 minutes.

    I have been making this for some time and I just looooove it! My boyfriend loves it to and I make it all the time. I pair it with some yummy garlic green beans and have a very good low carb meal!

    I’m going to be trying this over the weekend but I am going to pound out the chicken breasts and try it as a roll.
