Beef Stroganoff

This is the best Beef Stroganoff we have ever had. Everyone that has it at my house asks for the recipe.

Recipe By:
Serving Size: 8
Main Ingredient: Beef

-= Ingredients =-
2 pounds Stew meat
1 large onion ; chopped
1 can cream of mushroom soup
1 can cream of onion soup (I changed this to another can of Cream of Mushroom Soup)
1 can (4 oz) sliced mushrooms ; drained
1/4 teaspoon pepper
I added 2 teaspoons of worcestershire sauce
1 package (8 oz) cream cheese ; cubed
1 container (8 oz) Sour cream
6 cups hot cooked noodles or rice ; if desired (I used a very whole grain, high fiber pasta to slow the carbs down.)

-= Instructions =-
Mix beef, onion, soups, mushrooms and pepper in crockpot. Cover and cook on low 8-10 hours or until beef is very tender. Stir cream cheese into beef mixture until melted. Stir in sour cream. Serve beef mixture over noodles.

With the brands I used and 8 servings the carb count came out to about 29 grams. A bit high but the blood glucose reaction was not bad at all. I think it may be due to the ratio between protein/fats and carbs is skewed against the carbs and may slow down absorption.
