Lynne’s Tex-Mex Pie
1.5 pounds of regular hamburger
3 Tbsp steak spice (I used Club House, 1 g carbs per Tbsp.)
3 Tbsp hot chili powder (<3 g carbs)
1 small onion, diced (about 8 g carbs)
Saute the onions in butter or olive oil and add the other ingredients to your frying pan, cook the crumbled meat until all parts are well done. I was lucky today, I had chicken fat/drippings left from a batch of chicken legs to enhance the flavour. Turn the contents into a large pie plate, shaping so that there is a depression in the middle.
Add 1 small bottle of hot Mexican salsa. (I used President’s Choice, extra chunky). (I Tbsp=1 g carbs
Top with 1 cup of grated Tex-Mex (Kraft) cheese. (1/3 cup has about 1 g carb)
Refrigerate.
This is good for summer picnics and pot luck suppers. It’s very filling and you get about 8 servings.
