Lovespiral’s Toast

Toast
1 cup golden flaxseed meal
2 tablespoons protein powder (I used Soy Protein)
3 tablespoons almond flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
3 eggs
2/3 cup of water
1/3 cup of oil
Sweetener of your choice, about half as much as you need for one good sized cup of coffee. I used one packet of granulated Splenda
Mix wet and dry ingredients separately, then together. I whisk them a bit for good mixing. Then I spread it out on a big cookie sheet on parchment. Bake at 350 for about 20 to 25 minutes. When it cools, I toast it in the toaster (which was in a pile headed to goodwill when I rescued it!). It really tastes like multigrain bread! It will even sop up over easy eggs. So yummy!
It will work as bread without toasting. The whole recipe makes about 8 pieces of bread for me. Of course that could vary widely according to how big you remember a piece of bread is, or how long it's been since you've seen one!

I like it a little thinner (about 1/4 of and inch is good, 1/2 inch was too thick). I also used the same recipe and cooked it in 6 round globs on parchment paper. I split them, buttered them and put them under the broiler for hambuger buns. So yummy! I cooked the hamburger buns for 25 minutes at 350.
