Sponge Cake

Sponge Cake
2/3 cup almond flour
4 tablespoons melted butter
1 T artificial sweetener or 2 1/2 tablespoons DaVinci syrup (or sweetened to your taste)
2 large eggs, beaten
1/2 teaspoon baking powder
flavoring of choice - vanilla, lemon, almond, cocoa, whatever
Mix all. I cook this in a seven cup microwave muffin pan - takes 2 to 3 minutes on high in my microwave. Cook till risen and top is dry.
This is great for making strawberry shortcake or split with a little no-sugar raspberry jam between and whipped cream on top.
