Easy Waffles
i found this recipe and changed it so it would be better for diabetics. they can be frozen( we eat them up as soon as they are done).
1/2c whipping cream (or anything that has less then 3 carbs)
1/4 c water
1/4 c kefir or more water
1 tsp vanilla
2 eggs separated
3 Tbsp coconut oil or what ever oil you want
1 c plain ground pork rinds
2 Tbsp whey protein isolate
1/4 c almond flour
1 tsp baking powder
2 pkg stevia plus
1 1/2 tsp cinnamon
in a large mixing bowl, combine cream,water, kefir,vanilla,egg yolks and oil. set aside.
in a small bowl, combine the ground pork rind( i did mine with a rolling
pin when still in the bag),wpi,almond flour,baking powder,stevia and
cinnamon. stir the dry ingredients into the wet ingredients until just
combined.
in a small bowl with an electric mixer,whip the egg whites until stiff peaks form. Fold the beaten egg whites into the batter until just combine. let it rest while the iron heats up. i spray my iron with pam before heating it up. pour about 1c of batter.my iron has a light that goes off when they are done. less then 5min.or when steam stops if you don’t have a light.
Serve with melted butter, warm atkins or davinci syrup and a spoonful of blue berries ,i can’t have them but Ray can.
makes 3 8″ waffles
carbs appx 11 for everything so i woud say 3.5 for 1
this recipe is very flexible i have used soy powder and flaxseed meal instead of wpi, they turn out the same,beautiful.
